This advanced facility is equipped with state-of-the-art analytical instruments, such as HPLC/DAD and RI, GC/FID and GC/MS-MS, which allow us to rigorously assess key quality parameters, including acidity levels, peroxide value and polyphenol content. The laboratory is run by a team of highly experienced chemists and food technologists, under the supervision of Dimitris G. Hatzinikolaou, Professor at the National and Kapodistrian University of Athens.
